Hello. I'm new on the forums and am a chocolate enthusiast. I recently run across a company in California called Sacred Chocolate. They claimed to have made "the first chocolate manufacturer in human history to create a raw (low-temperature processed), organic, chocolate bar." Now, I'm not doubting there claim, but I am curious as to anyone who has experience making this type of chocolate? They said they made it using "unroasted (“raw”) [nibs], cold-pressed & stone-ground chocolate." Here is the link to their website: sacredchocolate.com/home.phpI'm still in the process to acquire one of these chocolates and tasting it for myself, but from the looks of it, it looks pretty convincing. Just to reiterate my question, does anyone have experience making a unroasted nib using a cold-pressure, stone grinder chocolate???

The guy's name on another forum is "Sacred Steve". I've read some of his posts on that forum, but don't recall coming across any specifics about how he does what he does.
In fact, come to think of it, I haven't seen any of his posts on Chocolatelife.com in a while...
