Hi ! New here. Because of allergies, the only way I will be able to enjoy chocolate again is to make it myself from scratch. I have the nibs and a Champion Juicer. I can't afford other equipment right now, but would be happy to just have chocolate again, even if a bit less perfect. Thanks to this site, I think I understand how to make chocolate liqueur using the Champion. But I need to know if I can then add a liquid sweetener like maple syrup or honey instead of sugar. Will it cause seizing? Does unrefined palm sugar work? I also need to know if I can make a decent finished product without using soy lecithin. Thanks for your help!

The champion is good only for pre-grinding (if that).
You do need a stone grinder to be able to make any sort of palatable chocolate. And no, you can't use any liquid sweeteners, they will seize the chocolate as you accurately predict.
It's definitely possible to make a fine chocolate without lecithin... in fact I make a 70% that is cacao and sugar only.

There are a few commercial companies supplying the health food markets who are producing chocolate bars with agave syrup. Any idea how they are doing it?
Also, palm sugar is much like brown sugar. Will it work?

Allergen free chocolate is a big and growing area. <a href="http://www.thenibble.com/reviews/nutri/sweets/vere-gourmet-chocolate.asp">Vere</a> in NY was producing such chocolate but it seems like they may have stopped operation. There are many postings on here about using alternative sweeteners like stevia, palm sugar, agave, just search for them.
