This is a chocolate making site and not one person here can answer my question on how to make 70% dark chocolate? Are you kiddin me or what?

I dont have the beans I have the powder. Cant someone just post a simple formula using cocoa powder?

I'm far from the forum police, and only speak for myself here, but the wealth of information available on this site has given me enough information to not only make chocolate in my own home but also build a multi-million dollar chocolate company.
For the most part, the folks using this forum won't reply kindly, or even reply at all to snotty posts like yours - especially when the information is already available on the site, and you just need to do a bit of reading.
My first reaction was: "What... does she want us to make it too???"
Having said that, I'll answer your question:
Cocoa beans = 40% cocoa butter and 60% cocoa powder (It's 40/60 because almost all cocoa powder still contains cocoa butter and is usually 90% cocoa solids and 10%+/- cocoa butter.)
This is important BECAUSE, the 70% figure in a 70% bar represents a combination of cocoa solids AND cocoa butter. 70% is almost never just 70% cocoa beans.
The remaining 30% is usually sugar and a tiny amount of vanilla about 0.5%)
So let's make 100g of 70% chocolate using cocoa powder: 0.5g vanilla 29.5g sugar 40g cocoa powder 30g cocoa butter

Hey Brad, don't be too hard on her, after all, it took 25 hours for someone to reply! That's obviously unacceptable! Nice recipe though. Do you mean that all that cost and effort and work sourcing good beans, roasting, grinding, cracking, winnowing, refining and conching for days is not needed? Tasting and blending and showcasing the subtle flavors and nuances of the different stock must be a waste of time also then..... Maybe I'll toss all my stuff and just whip out a batch of 70% in a bowl in 20 minutes whenever I need it LOL DreaminChoc, the truth is that people were probably reluctant to answer your question quickly because what you are asking to try is not really the way that real chocolate is made. It's like asking a group of wine folks "How much alcohol should I add to grape juice to make a Pinot Noir?" Sure they are both made from grapes originally but there are deeper differences......see the point? On the other hand, you won't find a better or more helpful group of real chocolate makers than this group. It also helps if folks know a little more about what your actually trying to do and why, sometimes they see options you may not have thought of. That's true here or any other skill/knowedge oriented forum. best luck, robert

Well Brad, my first post was a simple nice post asking how to make the chocolate. After all isnt this a chocolate everything site? All that info posted on the archives is way too complictaed for a new comer. I needed something very simple to understand for my first time. Isnt it funny on how many posts I received on this one? Instead of getting a simple answer on my 1st post?

Your remarks to Brad (who I do not know) are incendiary and terriorist in nature and go beyond the pale of human decency. It is one thing to have a lively discourse of ideas and philosophies and quite another to make personal attacks.
