Hello all,
I just found this forum lastnight, and I have to say you all are god sends. I am very new to the art of making artisain chocolates. My problem is, I wish to create sugar free chocolate without all the sugar substutes previously discussed. And the other problem is I am living with friends at the moment. So space, is a major problem for all of the wonderful equipment mentiond here, and the lack of need for major production in what you all would call a small scale.
So that said, can anyone suggest a place to buy pre-made unsweetened milk, or white chocolates so I can experment with a more natural approach?

well, seeing as we've discussed all viable sugar alternatives, that's going to be a hard request to meet If you don't want to use sugar alcohols, high intensity sweeteners, or natural high potency sweeteners, i think you're going to have a very hard time!

I don't mind using the natural high potency sweeteners, it's the sugar alcohols I don't really want to use. I was just wondering if there is a source for unsweetened chocolates out there, or am I pretty much going to have to either develop my own equipment on a much smaller scale or break down and buy equipment?

you MAY find an industrial mfr making an oligofiber based product with a high potency sweetener in it, but not certain. it tends to have viscosity issues and frankly doesn't taste as good as a polyol based product. I do know, however, that the work has been done to make it available should the demand be there, just not sure if that's happened or not...

That's what I was afraid of. If it is available, it would probably have to be purchased in bulk lots. For someone like me just starting out, not a good idea. And still the issue of I would really like to experment with adding my own blends of sweetners. So I'm going to have to get inventive and make my own. Thank you for your help.

Scarlet, if you just want to experiment, you could get a 100% dark chocolate like Guittards Oban, some cocoa butter, and some powdered milk and mix them together in the appropriate ratios and you would have an unsweetened milk chocolate or mix the cocoa butter and powdered milk to get an unsweetened white chocolate.
Granted it would be as smooth as a refined white or milk chocolate that's had the milk particles ground down along with the cacao particles, but it would give you a good approximation of the taste of what you're going for. Then with that base, just start playing with the sweeteners you're interested in and see how it tastes.
