Hi all,
I made a 80% cacao dark chocolate batch using beans from papua/New Guinea but I really don't like the taste too much, too smokey for my liking. I wanted to make some milk chocolate from this same chocolate since I don't have any more of the Papua New Guinea beans/nibs and I don't want to buy more. If I melted some of the 80% chocolate I have already made, add to my Santha and then add an appropriate amount of milk powder (and probably I will have to add cocoa butter and maybe sugar, I haven't done the math yet), do you think that would work to give me milk chocolate that would be similar had I started from the beginning with the chocolate liquor?
