Hi,
When I first made chocolate I used the champion juicer to grind my cocoa butter. The 2nd time I made chocolate I melted my cocoa butter with a double broiler and added the cocoa liquor. I am wondering what do other people do with cocoa butter. Do you melt it and if so is there a certain temperature I should not exceed? Has anyone found a taste difference in using the juicer vs. melting on the stove?

i never use a juicer. just heat the sugar and cocoa butter and nibs in the microwave and dump into the santha slowly. i also heat up the santha wheels

I use juicer every time I melt a butter...For me, it's easier and not time consuming..
