I'm using criollo cacao from Mexico, and it's really cool and all how it tastes like fruit, flowers etc...The thing is no one wants that, they just want chocolate. Strong, assertive classic chocolate flavor. What beans provide that? Or can I adjust my roast? Though it seems sad to burn off all those incredible aromas when I could probably find just the bean I'm looking for.

If you go to John's retail/wholesale store, all of his beans come with a fantastic description of how they roast and taste!

I'd argue with the statement that no one wants that, but that's beside the point. Generally, traditional chocolate is made with a blend of beans to balance (cancel?) out the flavors. If you can't find an individual bean that gives you the flavor you're looking for, you could try blending a few varieties.

Classic "cocoa" flavor that westerners have become accustomed to? Bulk Ivorian or Ghanian cocoa.

I've got some Sumatran beans at the moment that have incredible body, and taste like dark chocolate with a hint of orange when brewed normally.
