Hi:
Does the milk powder caramelize/maillardize at all if run in the grinder for 24+ hours? I don't know if the ~126F/52C temp is enough to do this, but, for example, I've done slow & low caramelization of other foods, and time lets it happen (e.g. onions done sous vide for 5 days).

Milk powder will caramelize but I don't think so at this low temperature. There was a thread somewhere in this forum about caramelizing milk powder in the oven before using it to make chocolate. However, I have not been able to find it yet. I'll post it when I do.
