Hi all,
I have tried to do some "strawberry chocolate" by mixing dry strawberry powder to white chocolate (see recipe below) in my grinder. In my mind I had the idea that cocoa butter would coat the powder as it happens for sugar. The resulting taste was very good but the problem was that after two hours of grinding I could still feel the powder "grain" on my tongue like no coating happened at all... Did anybody try something similar? My recipe is as follows (%)
cocoa butter 37 milk powder 28 sugar 28 strawberry powder 7
Any advice would be very helpful
Marco

Two hours is probably not long enough. Let it run for twelve and then check the mouth feel. Let it run longer if it's still not smooth enough.

Hey Thomas,
it worked indeed. I was worried that it wouldn't because the powder is very fine.
Excellent!
