Hello! I am learning how to make chocolate at home. I am wondering about a good, but inexpensive (around $100), machine to turn the cacao nibs into chocolate liquor. Of course, ideally I would use a grain mill or similar machine, but I really don't have the budget for it. Do you think that a good food processor will work for beginning chocolate processing? I used a cheap food processor before to make peanut butter, but it overheats and breaks. If you already have a melangeur you don't need to process to liquor first. You can go straight into the warmed bowl with heated nibs, added little by little. The Cuisinart will probably not be enough to liquefy the nibs.
Now, if what you're asking is if the Cuisinart will actually refine the chocolate, and serve as a substitute for a melangeur, then the answer is a definite no.
