Has anyone tried grinding roasted nibs and making chocolate from this stage rather than roasting the beans yourself? Is there a noticeable difference between the two? I'm trying to figure out if i should skip the roasting/cracking/winnowing step for now and just start with pre roasted nibs, or if i should just bite the bullet, buy more equipment and start from the bean...

It's actually a great way to get started if you don't have the cracking/winnowing gear. If the nibs are fresh, there should be little difference in the final product.

I've done it, and one of the positives is it's a lot less messy
