Hi Everyone! First I'd like to take a moment to thank Alchemist John for his help and support in getting into this great hobby. I have been experimenting with using just one machine to crack and grind roasted beans. I am happy to report that the Wondermill Junior grain mill ( thewondermill.com/) can do both. I electrified my mill, and by placing a 1/4" spacer between the metal grinder faces it easily cracks the beans. I then winnow the nibs, and (with the spacer removed) grind with the mill. My results are good, and produce a chocolate liquor that is easy for my melanger to use. If you like to produce your own stone ground flour AND process cocoa beans, I highly recommend the Wondermill Junior.
