First you need to determine if it was in fact iron oxide or silica gel, a desiccant. Contact the manufacturer of the milk powder and ask. Silica gel = you're all set.
On the other hand, if it truly was iron oxide, the bottom of the tub and the stones are granite. And granite is porous. If it was iron oxide, IF IT WERE ME, I would replace the tub and stones. Then I would wash the stone holder and anything else from the melange that is non-electric in the dishwasher on a long cycle. That would clean and sanitize it.

nuage9Did you dry the raspberries first? Usually water and chocolate don't mix at all and you get blooming right away. Maybe the absence of cocoa was the difference? Interesting formula! Thanks.

i've never had a wonder grinder. Can you take the entire wheel assembly out of the bowl? If so, I would do that and soak it in really hot water for a bit, then give it a try.

You can easily get a food grade epoxy and set those hubs back in. If you can safely do it, remove them, clean them and the stone, and the use the epoxy to put them back in. Hope this helps.

It also coud be the product they use to glue the plastic hub to the wheel? Are the hubs secure? When you cleaned the melange, did you brush out the center of the hubs?

saliI have found that my dark chocolate is always a bit more "snappy," or hard, than store bought. My milk chocolate is very melt-in-your-mouth. I believe it has to do with fat percentages, but I also feel it is the lack of artifical ingredients that causes this. We are dealing with just the raw products: cocao, butter and sugar. If you look at some of the store bought chocolates there are usually some additional ingredients. Caveat: I have never used date sugar, so I don't know the impact of that. Also, Ben will have a much more informed and educated take on this.

After taking a look at it online and reading some of the reviews, I would have my doubts about trying to process nibs in that machine. The Premier grinder is the same price (the non-stainless version is less expensive) and I would trust that before the Nutramilk. I could be way off though. .

rosieisaposie I have had 4 Premier melanges over the last few years and sometimes they all do it. I have taken apart the entire assembly, cleaned the wheel bearinigs, etc. and yet it still occasionally happens. It happens time to time It happens more towards the beginning of the grind, so maybe it is just a lump of sugar or hard cocoa liquor.

All of the ones I made were adjustable. I used silicone pads as well.....nope. But go for it and let us know how it goes!

I personally feel that vibrating tables are a waste of space and money. I have built three of them: 1 using a cement vibrator, 1 using a dental vibrating table, and one using a massager.
They work, but the molds bounce all over hell and back, they don't get all the bubbles out, and they are extremely messy.
Banging the molds on the table, or hitting the sides of the molds with a scraper works much, much better IMHO.
