Hello! Total newbie here!
I have a Premier Stainless steel tilting melanger and I’m running my first larger batch—trying to do 4kg—and the wheels are kind of lurching. They are still spinning, but not as freely as with my 1kg test batches. Halfway through the spin, it looks kinda like it’s lurching a little bit. I just don’t know if this is normal with larger batches as it’s my first time. I loosened the knob some and added a little more warmed cocoa butter which has helped some and the running temp is sitting at like 110F at my last check.
Thoughts? TIA!

rosieisaposie I have had 4 Premier melanges over the last few years and sometimes they all do it. I have taken apart the entire assembly, cleaned the wheel bearinigs, etc. and yet it still occasionally happens. It happens time to time It happens more towards the beginning of the grind, so maybe it is just a lump of sugar or hard cocoa liquor.

Thank you for the reply! Good to know I’m not alone in experiencing this. It got less “lurch-y” after 24 hours and by 48hr was moving fairly smooth again, so I’m thinking you are definitely correct and I probably just didnt allow my nibs to refine long enough before adding my next ingredients. Lesson learned! 🙌🏻 And either way, the chocolate was still delicious 😂
