Hi All, I started making chocolate using advice from this site and the very helpful community that uses it. 2 years ago I bought a Behmor roaster, second-hand Crankenstein, second-hand CHampion juicer, second-hand ACMC temperer and a small Inno Concepts Grinder. And a few beans from John Nanci of course! After 18 months of experiments I started a small (tiny) factory, bought some lab-size equipment and a bigger grinder from Inno Concepts (Cocoa Town now, I think) and started making chocolate to sell. This week one of my bars - the Honduras Indio Rojo - had been voted joint Best Chocolate in the World by the Academy of Chocolate (with Amadei). So thanks for all your help and get making chocolate!
