Hi, I am trying to write a biz plan and have a few very basic questions. I was hoping someone here might share some info with me. 1-how much chocolate by weight should a ton of beans yield? 2-how much cocoa by weight is on a pallet of beans? 3-what would an attainable price for a pallet of beans be for a small batch chocolate maker? Or what would I expect to have to order to get a decent price for some good quality beans. 4-Do most cocoa beans in the us arrive on the East coast? for some reason, that seems to be where I can get the best prices. 5-would anyone on the west coast be interested in going in together on some larger quantity of beans? 6-any awesome advice for someone who wants to start a family run bean to bar company in the northwest?

1) for general assumptions, i'd go with 75% (edit: 75% represents the yield i'd use for conversion of raw beans into nib. after re-reading your post you asked about chocolate - there's no way to determine how much chocolate the beans would yield w/o a formula...) 2) depends on too many variables to give one answer. each origin packs differently. If you want to do rough calculations, assume 65kg/bag. How many bags / pallet? Good question. 3) depends how good a negotiator you are, how much volume you buy, and how critical you are in your specifications. the less you buy and the more you specify in, the higher the cost. 4) yes.

Thank you Sabastian, When I am asking what you might expect to yield from a ton I am trying to break it down. If I get a ton of beans, how much chocolate can I make. we can say it is @ 100% cocoa content to make it easy. I am wondering what kind of average loss one might expect. I know it depends upon the machines etc. 75 % of weight in nibs is a good start though. thank you.
