Has anybody made an unsweetened milk chocolate? Ie, only using cocoa liquor, cocoa butter and milk solids with no added sugar? I was thinking of trying something like:
80% cacao liquor 0-5% cacao butter 20-15% whole mild solids.

Yep, just tasted some tonight made by oaxacolate on here. What's your question about it? Is it possible or how does it taste? Yes it's possible, and though there were some confounding factors, it wouldn't taste great without any sweeteners unless you like eating a lot of straight cacao nibs. Lactose is a sugar and vaguely sweet, but if you want this to be edible as a bar, you would probably have to add some sweetener.

John mentioned experimenting with a no sugar milk chocolate on his blog recently. We're interested in healthy chocolate, so I made a small batch with some bland cacao liquor we picked up while in Tabasco. I made a 80% cacao, including 20% c. butter, and there was not enough sweetness from the lactose to be enjoyable. If I make another batch, I plan to increase % milk and to sample a few different milk powders for taste to select the best option. I used a generic powder I had on hand for the first batch and it didn't compare well with other products I've used.
The crux of the matter for your formulation is whether you're shooting for a no sugar added product that tastes like sweetened "normal" chocolate or a different kind of chocolate product that defies those expectations. Preferred levels of sweetness vary greatly. Some people won't touch dark chocolate, others rush for an 80% bar. An interesting possibility would be using a high intensity sweetener, such as stevia, and replacing the sugar's mass with milk powder.
