Have a question.......I have a sister who lives half way across the country and she would like to get nibs from me to use in cooking but does not want to do any roasting.
My question is......if I make roasted nibs for her....how long do they last as good nibs and at what point are they most likely go stale? Anyone have any experience with keeping roasted nibs? Mine only last about 1 hour after winnowing before being made into chocolate.

You shouldn't have a problem. I would suggest that if they are going to be used in cooking to make sure you look them over real good for shells. That would not be good eats.

I have generally found that a couple weeks in warm weather and you will see a decline if using them for chocolate. In cool weather, that may extend. And if for baking, you may not notice the subtle difference for a few months. Cool and dry is the key to extending the shelf life.

Hi, So if I understand you, Nibs dont keep well, except Cool and Dry. My question is. If you have a few sacks of beans, Would it be better to keep them as beans as opposed to roasting them and storing nibs only. Any answer much appreciated......

Hi Oaxacalote, Thanks for that. I guess the real issue is having to contend with moths / mould and any number of other things raw beans may be prone to as opposed to nibs, bagged and sealed? Your comments.... Something inside (with no experience to back it up) tells me to get them out of raw bean form as quickly as possible. ??

You can store raw beans in a cold room to deter moths and other critters from thriving. Most of the bugs that would be in the beans are tropical heat loving, so if its drastically colder, they can't survive. If you can CO2 gas all of your beans for 24 hrs, then move them to a cold room, i think you'd be in pretty good shape.

Hi, At the risk of sounding brash (I'm really not, ask my mother).... on second thoughts, she might agree......... OK ask Elise, my wife.......... oh hell, not her either, OK. For some reason I'm inclined to want to store NIBS as opposed to beans. Can you tell me why or am I just being daft. OK. This wouldn't be complete if I didn't tell you the Moses / G_d joke. Here goes. G_d says keep Kosher. Moses asks what does that mean? G-d says, separate knives and forks. Moses asks, and plates. G-d says, Plates as well. Moses asks... and fridge, separate fridges? Gd says, yes, that too. Moses to G-d, and milk and meat, separate? Yes............ Moses to G-d, and what if...........? G-d to Moses. Just do what the hell you want! well its suppose to be funny. I guess its like the nibs VS the beans. lol

Ah... now that's language I understand and Its not even Hebrew. Thanks. Point well made and taken. but then Moses said "even if its kept in an air tight container"? (just don't retort with "Just do what the hell you want!". but if you do. I get the message, loud and clear. T
Oh. I got my answer on the 'storing roaster beans', thread. I guess thats it. Thanks everyone for t the advise. T
