Our upstairs neighbor's pipes just burst and flooded our whole shop. The worst damage involves 2 65 kg bags of beans being completely flooded and soaked. They are currently drying in their burlap bags. Will the beans still be ok? Anyone have any advice so that we don't lose thousands of $ in beans?

Get them out of the burlap sacks asap, especially if they're still moist! Spread them out in a dry area as much as you can, with lots (lots!) of air circulation. The last thing you want is for your beans to get moldy! The husk absorbs moisture readily so the beans need to be re-dried or there's a great chance of them going moldy.

Thanks Cheebs, that should help. Unfortunately we realized we'll probably have to throw out the beans. The water came from burst radiator and plumbing pipes. It also dripped through an apartment floor through to our shop. We're guessing it's dirty water and our beans could have all sorts of contaminents.

Wow, that bites My condolences. Was there any sewage involved? If not I'd still try to rescue them by throwing them in some boiling water for a minute or two and then drying (thoroughly!) in a warm oven, preferably on perforated pans. And will your upstairs neighbor assume responsibility for the damages?

We don't know if sewage was involved or not. The upstairs neighbors have been away and their heat ran out when it was -15 F. Radiators and plumbing both froze and exploded, so sewage may be involved. There is a bathroom above us.
There is no guarantee the beans are safe so I don't think we can make chocolate for the public with them. Thanks for the tip about boiling. We'll probably keep the beans for personal use, and boil them as we use them.
As for the neighbors, I don't know. No one has been able to find them. It's a big puzzle. They took their cat so they may have abandoned the place. But they left their only car and all their belongings.
