not sure this is the correct area for this, or if I should put it in the recipes section. I am new to this board, as well as being new to playing with chocolate. ;D I have been working on a recipe for cinnamon honey hearts, and I think I just might have worked it out. I used unsweetened baking chocolate (learned that BAKERS is to bitter (thank you alchemist)) since I currently do not have a melanger. I used 80oz unsweetened chocolate, 2 cups of sugar, 2 cups of powdered milk, and 2 tablespoons of cinnamon. I ran the sugar and milk through my food processor then added them to the chocolate. using a double boiler method to melt, I mixed them together. Not as smooth as using a melanger, I hope to get one eventually. Using a 1/4tsp measuring spoon, I filled the heart shaped molds half full. using a bamboo skewer, I hollowed out the center. using a 1/8tsp measuring spoon, I filled the hollow with clover honey, then capped with more chocolate. If any one has any suggestions on ingredient amounts (more or less of something) please do not hesitate to share them.
