I was just thinking about boiled peanuts and thought I'd see what happens when boilling some beans. I put 50 medium sized beans (~50 g) in a pot of boiling water. After 15 minutes, I pulled one out and tried it out. The center was still tan and al dente. The taste was very bitter, with a chocolate after taste. After 3o minutes, I pulled one again and tried it. The center was brown and soft. Taste was still very bitter and the after taste was stronger. After 45 minutes, the bean was possibly overcooked (water logged) and the taste was more bitter. I let it continue for 2 hours before stopping it. I'll hold onto the water and see if any fat consolidates on top. I'll also hold onto the beans and try roasting them.
For me, a boiled bean is too bitter to eat alone. But, I'm wondering if there may be a use to a quick blanching, grinding, and adding to a sweet/savory dish to create a nice sauce.

I think that there are some people on egullet that make a broth from chocolate. It appears to be a challege from a chef that they took up and completed. Might go look there for tips?
