Is anyone doing any sorting based on bean density? I've noticed in doing some bean washing that some of the beans float and others sink. I did it with shell on, planning to try nib only and see if one can test fat content by this method.

I wouldn't recommend doing this, unless you plan on roasting immediately or have some way of drying the beans. Getting water on the beans does not air-dry (~70F room temp) very well. As a matter of fact they seem to drink it up and in one test it seems I had to roast the beans twice as long before they weren't still moist inside.
