Hello. I just got a Spectra 11 and did the initial 20 min rice grind it suggests. It worked great but as I took it apart to clean the bolts on either side of the wheels simply won't budge. I'm afraid to hold the middle part too hard as it may snap. Wrenches on both both side bolts simultaneously didn't work either. It won't budge. Any tips? Thanks.

That's crazy. I used to use a spectra 11 and don't remember any issues removing the bolts. I'd reach out to Spectra and let them know about the situation and ask what they suggest. At least then, if you do end up breaking the center piece (which I think is probably unlikely), they're aware of the problem and should replace the piece free of charge.

Yeah same I took the wheels off for cleaning after each batch and never had issues that sounds odd.

The guy in the hardware store recommended heating the bolt with a hair dryer first and it worked. Dunno why it was so tight from the factory. Thanks all.
