I own several old tinned, hinged 2-part metal molds that I am playing around with.
It struck me that perhaps some of the older chocolate texts/reference books might contain valuable insights for me, but I'm not sure how to identify possible candidates.
I have several sizes. I've had good luck unmolding them when I make solid pieces, but not so much when I try to use those same molds to do hollow pieces. They tend to break along the hinge point, or in one case come cleanly out of one side but then the nice "whole" piece won't release from the other side.
