I just discovered 4lbs of unroasted beans, still in the packing and box from chocolate alchemy, from 2021. My question is how long are Unroasted beans viable? Is it worth even trying to make chocolate with them, now? Thank you

Unroasted beans can last for years if stored properly (cool and dry). Those beans you’re describing are probably totally fine.

Mark's right. I'm sure they're fine. Early on in my chocolate making career, I bought a full bag of a venezuelan cacao that took me over 2 years to work through. By the end, the flavor had mellowed the tiniest bit and the beans were a bit more fragile, but still made great chocolate..
