If you are making a 45% Cocoa content milk chocolate (following the minimum milk content) would the recipe be; 45 oz. cocoa content 3.39 oz. milk fat 12 oz. nonfat dry milk powder 39.61 oz. sugar OR 45 oz. cocoa content 8.61 oz. nonfat milk powder 3.39 oz. milk fat 43 oz. sugar I guess what I am asking is; is the 12% minimum milk solids the powder by itself or the total milk content (milk powder + milk fat)? As I am understanding it, the milk solids is the nonfat milk powder and then you must add 3.39% milk fat (clarified butter) to a recipe? I obviously don't use whole milk powder, so I am trying to make sure I understand all of the 'rules'. Thanks to anyone that can decipher this question! Andrea

Milk solids. You need 12% min milk solids, and 3.39% anhydrous milk fat as well.
