I was curious to try the goat chocolate recipe from the alchemy website so I stocked up on dried goats milk and made a hefty batch. About 10 hours in the santha and I was getting discouraged because I definitely could taste goat. Granted I'm pregnant and can taste and smell everything within a square mile, but the recipe said there was no gaot flavor and I felt real let down. BUT, going on 15 hours in the Santha, the last 8 or so with a heat lamp on it, and no goat flavor. I guess it was driven off with the conching? I'm not sure how the chemistry works but it tastes great now so don't be afraid to try the goat milk!

Good observation and I am glad I did not lead you astray. Yes, the capric acid is volatile and does go away. Even without the heat lamp it will go away, but that definitely will speed the process.

i'm finding that my batch of goats milk chocolate still has the "goat" flavor after 24 hrs refining (at room temp) in the santha. actually, i like it just fine compared to a whole milk choc of the same formulation, but every single person that's tried it, blind or otherwise votes against the goat's milk (they all say there's an aftertaste they don't like, but the flavor over all is still good) did i not refine/conch long enough? i used the recipe from this site, so hopefully that will standardize other people's findings to my own. i have enough goat's milk powder for another 4lbs, so worst case is i have to eat it all my self

What is your recipe? Proportions all the way around? Might be in the formulation or the bean choice.

i used the formula/recipe:
20% cacao (Ivory Coast beans) 25% cacao butter (natural) 20% goat's milk 35% sugar
