Any suggestions on the best way to ship finished chocolate...?

Shipping is an endless problem, especially in summer.
Best bet is to ship solid chocolate in a completely sealed container. Temper upon arrival.
Otherwise, the only very reliable option is insulated package with ice, shipped overnight express service.
In the winter or if the weather is cool, ground often works with no special packaging. But it's just hard to be totally reliable if there's warm weather anywhere between the destinations... and remember, packages don't necessarily travel in straight lines.
