I was just thinking about shipping chocolate during warm weather, and remembered that using parafin wax in the mix used to be standard practice (at least for American chocolate companies) way back when. Has anyone done this recently? Or know of any companies doing it anymore? I know Hershey's used to do it, has the FDA put limitations on this practice and that is why it doesn't seem to happen anymore?

I remember buying Ghirardelli Flicks when I was a kid: they were like Hershey's kisses that came in a cardboard tube and they were probably 50% wax. It was like eating a chocolate-flavored candle. I was never crazy about them because wax melts at a highter temperature, so the chocolate never quite seemed to melt smoothly in your mouth. I did recently see, however, a company that actually coats their chocolates in wax, similar to that on some cheeses. They do some pretty neat designs using different colored waxes, too. Check out the interesting selection at www.chocolatesmith.com/02products/waxchocolate.html

Chocorock - could you paste the information here? Is it brief enough? I tried your link but it takes passwords...
