After seeing a pointer to Richardson Researches in one of the forum posts here (can't find the post, but many thanks to the poster!), I took the leap and signed up for their Chocolate Technology course at UC Davis. It was a huge amount of fun, and generally a firehose of information. The instructors were Terry Richardson (a 35+ year chocolate expert), Ed Seguine (VP of R&D at Guittard), and Thalia Hohenthal (Senior Scientist at Guittard.) It covered the whole process from beans to enrobing, and has given me a ton of new ideas on how to improve what I've started from the information here. I've posted longish, but still hopelessly incomplete notes on my blog at cacaolab.wordpress.com. Just click the "Chocolate Technology Course" tag on the right side and you can read the notes without having to deal with reading my boring personal ramblings on various chocolate topics.
Apologies in advance for the errors and omissions in the notes. Corrections or questions are welcome.

Glad you enjoyed it! There's a series of courses, and the instructors are more or less the same for all of them - they are very knowledgeable.

Well I am still jealous that I didn't get to go to that course that just happend but I will hopefully get in on the one next year... Thalia Hohenthal which teaches that class often is one of the nicest women I have met in the chocolate business...she does a great job at what she does and is always willing to help others. Wow. I used to work with Ed Seguine at P&G back in the early 1980s. Excellent scientist.

Ed's actually working on retirement now he's moved out to the east coast and still is involved, but winding down. Glad to have him out this way!
