Hi All, I came across this YouTube video on the Science of Tempering Chocolate. It was created by the MIT Department of Materials Science & Engineering. Although it is very easy to understand. It is about the science of tempering and not a guide or instructional. If you are new to working with chocolate or want an in depth understanding of tempering, then this video is for you.
