I'm trying to make a hot chocolate that emulates the visual effect of a layered latte (picture below). I start with a 33% cacao based chocolate melted into hot water. I then add this to a glass of milk I heat with an espresso steam wand. If I foam milk I can get the foam to sit on top easily. However, I'm having trouble maintaining separation between the milk and water based hot chocolate. I assume that this is due to the fact that hot chocolate is denser than coffee, so it is not as easy to keep it on top of the milk. But I can get some separation between them.
I'm wondering if anyone else has attempted this and has any pointers, tips, or tricks to offer.
