Hi, I'm looking for advice on reheating ganache. Basically I am wondering if i can make a big batch of ganache to fill truffles with and use it bit by bit over several days or if it needs using right away? My concern is reheating it to ensure that its warm enough to work with. Will this impair the crystal structures? Thanks!

Yes, you can reheat ganache. I do it all the time.
