My workplace recently began making chocolate from bean. We keep the melanger running in a designated chocolate production room where I spend about 4-5 hours everyday. After working in there, I find that my coat and pants smell sour. The chocolate tastes and smells fine and we work cleanly so I am not concerned about the product, more just about if I'm unpleasant to be around after working with chocolate . Wondering if anyone else has ever experienced this or if I am just becoming adverse to the smell of chocolate because I work with it so much.

I love the smell of chocolate, but not the smell of me after making chocolate. I think it's just that our clothes absorb the acids, etc. that come off of the beans during refining. I only have this problem when grinding/refining chocolate--not when working with the finished chocolate.
