Hi friends of chocolate, We have been making bars for a year now and all has been terrific. Melanging going great, tempering perfect and our polycarbonate bar molds were perfect. But a couple months ago, despite cleaning the molds with a soft cloth before use, we have been seeing a few streaks that are tan, a few mm wide and maybe 1 cm long on the top of the bar after we get it out of the mold. It is inconsistent: sometimes it shows up on only one bar of one mold; other times it is on one bar in each of 4 molds! Otherwise the bars are terrific. Can you help? Coleen

Are you slightly heating the molds? Where are you cooling them? Is it the same bar in the different molds? (for instance, bar 3 of 4)
