Hello out there - Does anyone have any knowledge to share about chocolate or cocoa butter transfer sheets? I've seen them before, have found them on the internet, but I'm interested in knowing how they are made. Does anyone know how the patterns are deposited, how think they are, the transfer material (is it colored cocoa butter?). etc etc etc. The prices for the run of the mill transfer sheets I've found wasn't high - but I have some specific patterns and logos in mind, and the custom-designed limited-production runs seem bit expensive for my taste. Most use food quality printers to deposit the colored cocoa butter. There's a fella on egullet who'll make you custom transfers (lloyd, i believe - search the pastry form for transfers and you'll find him), for a reasonable price. Alternatively, you can make them yourself - i taught my daughter how to do it two weekends ago. Get a sheet of acetate (we actually used a clear sheet protector - you know, the kind you put papers into when you want to protect them in a 3 ring binder), and 'painted' colored cocoa butter onto it. If you've got intricate designs that you want to repeat, this is a bit tedious to do it this way however.
