bean or combination of beans if I want dark chocolate with a very strong cocoa flavor and no fruity taste.

I would suggest the Ghana Forastero. Classic chocolate flavor, virtually no fruit. Depending how you roast it, either of the Dominican Republic beans would also work well. I would expect those to be a little "softer" on the palette.

I haven't tried near the varieties of beans that John has, but of all the ones I have tried, the Ghana Forastero is as close to a traditional dark chocolate taste as any I've tried.
