Hello, I was trying out using the cocoa butter silk method for tempering for the first time and while it worked perfectly for a lot of the bars, some came out with spots like this. The top layer of chocolate came off (still on the mold) and left behind an untempered splotch beneath it. Did I take them out too early? To me those look like molding marks not a question of tempering. How long did you leave the bars to set up? Did you leave at room temp or put in a fridge?

To add to Chip's questions: were the bars fully separated from the molds before you de-molded them?

I waited for 2 hrs. They got put into a wine fridge (about 45 degrees) for ~ 10 mins. They weren’t completely separated from the mold but it didn’t take much to get them to fall out.

I don’t use silk but it looks like the chocolate was not fully tempered or fell out of temper while in the molds. Can you better describe your tempering and molding process? When you added silk, how long did you stir, where did the bars sit in the molds and the ambient temperature, etc. Did you test the temper prior to molding? If not, you should.

Ideally, the bars would fully separate from the molds before de-molding. I always get worse release marks if I don't wait for that.
That being said, these have a lot of marks. My guess is that it's a combination of more than one of the things mentioned in this thread. Definitely look at your tempering process, and you may also want to experiment with leaving them longer in the wine fridge. 45F is cooler than is generally recommended for cooling bars, and your bars look pretty thick, so maybe you're cooling the outside too quickly while the inside remains too warm or something.
