Hi, I have 3savage bros chocolate melters, 2 small 50lb ones for dark and white chocolate, and 1 125lb one for milk, which is the one I’m having trouble with. I use Wilbur cashmere 140v, and peters broc 90v, I use 50/50 when I fill up the melter. Sometimes I’ll heat it up overnight to 120F, and when I come in the next morning it has a temperature of 92.2F, I then seed it, but just lately it’s a little thick and dull, where am I going wrong with this. I own a candy store, and recently enrolled in a chocolate school, but they only teach you table tempering, not how to use my melter, I live in Florida, so it’s very humid here, but the last couple of weeks or so have been pretty cold.
