Hi,
I'm about to start my journey as a future alchemist from my kitchen with the goal of creating a business out of it later this year.
I have finished my online study and research and next step is the actual practice. However, before I jump into it, I have a few questions even after having read through many posts and thoughts about which equipment that can and cannot do what:
1) You say that it is not possible/recommendable to crack beans with a grain mill. However I did a workshop in Costa Rica with a guy who is doing exactly that. A manual grain mill that he runs the beans through a couple of times as he tightens it more and more until the nibs are good to go into his Spectra 11. Do you have any thoughts/advice on why exactly this is not a good way to go?
2) I have an Omega 8004 juicer. Have you ever tried cracking beans with this? There is no "netting" to take off as with the Champion, because it's attached to a juicing screen/cone but I thought maybe you can crack/cut the net part off so the cracked beans could run through like with the Champion??
3) And most importantly: I can't seem to find ANY info on roasting the beans over open fire in a wok or pan - apart from really authentic youtube videos from the Central American jungle. However I'm curious about this technique because it's more "hands on" in a nice old school way. I imagine the challenge is regarding the difficulty of making an even roast. But what if you're equipped with a good IR thermometer, strong arms and patience?? What is your experience with this?
