Well, the time has come to purchase a tempering machine. I have been looking at the Chocovisions Rev 5, which sells new for about $1600. Then I found a machine on craigslist called the Hillards Little Dipper, which appears to be more of a heavy duty or beefier machine that the Rev 5 and it's selling for $900 and comes with a rolling stand. Can anyone tell me what their thoughts are on the Little Dipper? It would sure be nice to save some money, but I dont want to waste it on a product that wont deliver the quality of chocolate I'm striving to get. I'm very new chocolate making and doing this over a double boiler is not giving me the temperature control I desire or a great looking end product. This Hillards beast weighs in at about 45 pounds without the stand, so before I load it up in my car and take it to the alchemist to look at, I'd like some opinions please.
thanks!
