Hi all!
When I first started using the Santha I was preheating my ingredients but still having to go through a fairly binding phase when introducing most of the dry goods (sugar, milk powder, or what have you...)
I'm sure someone else has suggested this elsewhere already, but my brain finally kicked into gear today and I just heated the Santha bowl with a hair drier as I introduced the drier elements--what a difference! Much smoother transition to nice smooth refining. Give it a try if you've been experiencing similar conditions...

Thanks for the link! That was exactly the point--just to thin out the mixture with a touch of heat and help the Santha get started in earnest. It wasn't ever really an issue making bittersweets, but once I tried a milk I did run into some viscosity problems and the extra heat helped a lot.
