I make small batches of chocolate at home and thought I would share my setup for cooling the chocolate after it's poured into molds. My batch size is no larger than 3Kg (6.6 Lbs.). This equates to about 10 to 12 molds depending on any inclusions. Here's a photo of a single rack setup. I always use a small fan and only mold when the ambient temperature is adequate.
