I have not tried this yet, I plan on making them and will report back on the success or failure.
Mocha Dipped Chewy Granola Bars
the bar:
3 1/2 cups of Old Fashioned Organic Rolled Oats 1/2 cup of organic whole wheat flour 1 1/2 cups of organic rice crisps 1 tsp of baking powder 1/2 tsp salt 1 tsp ground cinnamon 1/2 tsp allspice 1/4 tsp ground ginger 1/4 cup crunchy organic peanut butter 1/2 cup organic brown sugar 1/4 cup locally grown honey 1 TBSP Stevia 1/4 cup of butter 2 TBSP coconut oil 2 tsp vanilla 1 TBSP fresh brewed coffee or mocha 1/4 cup dried cherries 1/4 cup semi-sweet chocolate chunks 1/4 cup of chopped and crushed cashews
preheat oven to 375 F, grease, flour large cookie sheet or 13x9x2 pan. in a mixing bowl, cream butter, melted coconut oil, peanut butter, stevia, brown sugar and honey. Add coffee and vanilla. In another bowl add oats, flour, baking powder, salt, cinnamon, allspice, ginger, mix well. Add all mixed dry ingredients to creamed mixture. Add rice crisps, mix well. Add cashews, chocolate chunks, dried cherries, mix well. press into pan and bake for 30-40 min, until top is light golden brown. cool for 2 hours, cut into bars and dip into melted chocolate.
the dip:
1/2 large Green and Black's Espresso Bar 1/2 large Green and Black's Baking Bar 1/2 large Green and Black's 70% Dark Bar.
chop bars up into fine pieces melt into double boiler
set dipped bars onto silpad or wax paper let cool for 30 min to 1 hour.
