Chocolate (Crusted) Pumpkin PieSource: "El Pais" newspaper, by Cristina Scheck de Restano Serves: 6-8 Crust:2 cups chocolate cookies very fine chopped 3 tbsp. sugar 1/3 cup melted butter Filling:1 kilo (2.25 lbs) mashed pumpkin 1/3 cup brown sugar 2 tsp. vanilla 2 tsp. Cognac or similar 4 eggs 1/3 cup white sugar 250 ml double cream (48-50% milkfat cream) Make Crust:Mix the chopped cookies with the sugar and the butter forming a dough and cover base and sides of a round pan with it, pressing with the hands. Refrigerate for about 30 minutes. Make Filling:For the filling mix the mashed pumpkin with the brown suga, vanilla, and 1 tbsp. liquor. Cover the base with the pumpkin mix. Beat the eggs with the white sugar until thick, add 1 tbsp. liquor and the cream and mix all. Put this mix over the base and mix with a fork, making drawings.
