I'm going to make 70% chocolate from the Dominican Republc Elvasia Organic beans I bought from chocolate alchemy. I also bought some cocoa butter, but I've never used that when making chocolate.
I know different beans have different amounts of cocoa butter, so what % (if any) of cocoa butter should I add?

Hi Max, As with a lot of decisions in chocolate making, there's no one right answer for this. Whether to add cocoa butter, or how much depends on you and the chocolate you want to make. To figure out what you like, you'll probably need to do several test batches with varying amounts of cocoa butter. A good start may be to do batches with 0%, 5% and 10%. -Ben

I've made some 70% chocolate with the Dominican Republic Elvasia Organic bean with no cocoa butter and it was great. However, I did add some vanilla bean.
