I'm attempting to make chocolate for the 1st time and am doing a little over 6 oz of nibs and 60% chocolate using the Premier Wonder. After running an hour and turning to liquor I slowly added the sugar and ran about 5 hours. I stopped it for a few minutes to taste it and also stopped a few times just to give the motor a chance to rest.
The problem is the chocolate bunches up before it comes back through the rollers, whereas before it was smooth and it seems to be getting thicker, almost like chocolate frosting. I was thinking maybe it cooled when I tasted it so I warmed it with the hair dryer.
Any other ideas?
Heating with the hair dryer didn't help and it seems to have dried out. I put a kitchen towel for now.

i don't see anything wrong with it. hard to say exactly w/o the details, but either it's just beginning to grind so the cocoa butter hasn't been released yet, the formula needs more cocoa butter, it needs to be warmer, or there's no emulsifier in it yet.

Thanks. This was after about 5 hours of running and it was smooth before, but then hardened to what you see in the video. I don't have cocoa butter or any kind of emulsifier. I was trying to make it with just chocolate and sugar to really get a feeling for the taste of the beans so I know which ones I like.
Does it look like the 6oz of nibs in the machine are enough to generate the heat to keep it liquid?

My first guess without having seen the video was that 6oz wasn't enough to generate enough heat. Once it starts bunching up on the rollers, I'd imagine it cools down pretty quickly. Do you have an infrared thermometer to check the temp? When I do test batches of new beans, I try to do at least a pound or two (usually two).
