Looking for help in making chocolates using honey instead of sugar for retail sales. I have been using organic-cocoa powder, cocoa butter chips, Madagascar vanilla and honey. I don't realy have access to (affordable) beans or other quality ingredients at the present time and the stuff I make in the kitchen is not so tasty but ok. I like using organic coconut oil and get rave reviews but it melts so easy and it's not real but easy to make. My friend has almost 200 bee hives and wants me to come up with a simple chocolate recipe that taste good and uses honey as the sweetener. I make organic caramel with the honey using 1 cup whipping cream or coconut cream and 1 cup honey 1 tsp vanilla bring to 165 f pour into mold cool and add pecans to mold place caramel on pecans pour chocolate facsimile and it's good, but I would like the real deal. Any suggestions on recipe with ingredients I mentioned? or do I have to order some other ingredients? Also if I have to order other ingredients and am serious about making chocolates would taking a trip to Tabasco Mexico and living there for 2-3 months, making contacts and learning about chocolate be a good idea (I don't speak Spanish)? I live in Victoria BC and Vancouver is the closest place for wholesale supplies.

First you need to read the information already published here and on sister site Chocolate Alchemy. There are many similar threads to yours, asking pretty much the same question. The short answer is no. Honey contains water, which is chocolate's #1 enemy.

Not sure if this is relevant but before I made the original post I followed a recipe that I found and was able to get a good temper and nice visual looking chocolate but the taste was not to my liking. My girlfriend said it taste like a Lindt chocolate that she had tried. I got the recipe from livinghealthywithchocolate.com/ I'm still a noob but I get free honey and organic cocoa powder. I hope to get money to buy beans and other ingredients one day soon. I bought a used champion juicer for 40 bucks, and am getting other items as I go. I don't really have time to read all the posts here as I'm a farmer on the side. Yes I am also going to learn Spanish maybe in the winter as I plan to leave Canada one day and take a vacation so it's Mexico or Africa. (Tabasco or The Ivory Coast (My Spanish may not be so good in Africa) I am putting this on for all to read so you can help, laugh, cry, and see that I know little and am going to do lots! I'm no better than anyone but am willing to learn, experiment, crash and burn. I am willing to share everything I learn, time permitting, and hope some people out there can save me some time on mistakes I'm about to commit. (I am trying to make a local Honey sweetened chocolate product to sell that people like and is on the healthy side compared to the #%$ out there) Steve
