I already use an Aether winnower for my larger batches of chocolate, but had long been in need of something that worked on a much smaller scale. I get a lot of cacao samples and the bowl/hair dryer method was getting old and slow.
So, when John debuted the Sylph winnower (powered by a small sop-vac) I jumped on one and not long ago it finally arrived on the slow boat from Miami.
Since it comes basically already assembled, we just made sure the bucket was well sealed and all the tubes were in place. We've been using a drill-powered Crankandstein for cracking for a while now, and saw no need to do anything differently in that respect.
In went the first few 10oz samples as per the instructions, until we got the two valves (the only moveable parts) fully adjusted for a pretty much picture-perfect 80% recovery.
After adjustment we ran a 10-kilo batch through in about 20 minutes. Nibs came out clean and dust-free!
