I was surprised by the odor when I put the Nicaragua bean in the grinder. I did not smell any vinegar at all when I did the Ghana bean, but the Nicaragua was pure vinegar with a hint of banana bread. After a few hours it was going away though, and I did not detect any after 10 hours, just a delicious banana fruit aroma.
